Edit/Rename "Uncategorized" Category

Allow for users to rename the "Uncategorized" Category to something custom. May still want to indicate that it's the default Category for uncategorized Posts.

If we add custom categories, we should be able to remove “uncategorized” from the dropdown options. Or you should add the ability to rename the field and make it so that users can actually select it from the dropdown.

Would appreciate this functionality. We want a category called "Other" to capture integration requests that don't fall into a category we've already considered, but it looks odd in the UI next to "Uncategorized".
